Introduction

 

This Apprenticeship covers a range of occupations within hospitality and catering, one of the largest industries in the country. Hospitality and catering covers work in restaurants, hotels, cafés, pubs, and contract caterers. If you want a career in Catering and Hospitality then this Apprenticeship is for you. The Catering and Hospitality Apprenticeships offers a combination of qualifications, that will equip you with the skills and knowledge you need to work in the kitchen or front of house.

 

To undertake an Apprenticeship in Catering and Hospitality, you must be committed and have the determination and motivation to succeed.

 

Programme Levels:

 

Apprenticeship

  • Diploma in Professional Cookery Level 2
  • Diploma in Hospitality Services Level 2

 

Advanced Apprenticeship

  • Diploma in Professional Cookery Level 3
  • Diploma in Hospitality and Leadership Level 3

 

You will also undertake Key Skills and a Technical Certificate alongside the Diploma whilst attending college on a day release basis.

 

Programme Length

 

Apprenticeship in Professional Cookery or Hospitality Services – 12 months

 

Advanced Apprenticeship in Professional Cookery or Hospitality and Leadership – 12-18 months

 

Course Content

 

Selection of units from the Professional Cookery Apprenticeship:

 

  • Work effectively as part of a hospitality team
  • Maintain a safe, hygienic and secure working environment
  • Prepare fish for basic dishes
  • Cook and finish basic meat dishes
  • Prepare, cook and finish basic soups

 

Assessment

 

You will be assessed in one or more of the following ways:

 

  • Course Work
  • Exams
  • Oral Questioning
  • Portfolio of Evidence
  • Practical Demonstration/Assignment
  • Practical Examination
  • Written Examination

 

Careers Progression

 

The Level Two Apprenticeship will give you the opportunity to progress on to the the Level Three Advanced Apprenticeship. On successful completion of the Apprenticeship the natural progression would be a higher level course or employment, giving you a broader range and quality of skills and understanding of the industry.
